Organic Certified Rata Honey

Rata
Honey is produced predominantly from the
Southern Rata on the West coast of New Zealand's
South Island. While there are eight Rata species
(Metrosideros sp.) in New Zealand including some
vines as well as trees, Southern Rata (Metrosideros
umbellata) is the main honey source. This honey
is very light in color and distinctively
flavored with an almost salty taste. The pollen
is triangular and typical of the Myrtaceae
(Myrtle) family which includes eucalypts, bottle
brushes and leptospermums (manuka).
Southern Rata flowers from early January to
March. The lowland trees start flowering first
and the flowering then progresses up to higher
altitudes. In some areas it is possible to see a
distinct band of red cutting around the
mountainsides, the lower trees having finished
flowering. The frequency of the Rata flowering
is sporadic, some saying it flowers well every 3
years and spectacularly every 7 years. This is
an approximation only as it can flower well for
3 years in a row and not at all some years
making the honey supply intermittent. This
irregularity of supply is offset by Rata being
one of the finest honeys in the world, and when
a good flowering coincides with with fine,
stable weather, it can produce a prolific crop
of high quality.
Rata honey is one of the fastest crystallizing
honeys with a proportionally high glucose
content. Rata honey naturally separates into a
liquid phase (top) and a creamy phase (bottom).
Some people prefer to eat the layers separately,
whereas others prefer to mix them before eating.

Thyme, a member
of the mint family, is native to the countries
bordering the Mediterranean where the herb grows
wild. During the New Zealand gold rush of the
late 1800’s, miners brought common thyme (Thymus
vulgaris) to the area to be used as a medicinal
plant. Thyme slowly spread and now the Central
Otago region of the South Island of New Zealand
is the perhaps the only area outside of the
Mediterranean where it still grows wild. This
honey is known not only for it herbal qualities
but also as a strong antioxidant honey. Thyme
Honey is a very full-flavored and pungent honey.
This herbal honey is definitely distinctive.
Thyme honey can be used sparingly as it can be
quite strong. Useful in cooking, Thyme honey
retains its unique flavor and adds a gourmet
dash to any meal.

Blue Borage Honey

The
Vipers Bugloss plant - commonly known as Blue
Borage - grows wild in the remote areas of the
Clarence Reserve in the Kaikoura mountain range
in New Zealand. It is one of the hardest won
honeys in New Zealand from one of the purest
sources. The wild flower covers the hills of the
Central South Island in a floral carpet of
brilliant blue flowers. The plant produces a
nectar at lower temperatures than clover
yielding a very dry honey with a chewy or tacky
texture. Blue Borage is slower to crystallize,
and has been used in folklore to treat stress
and fatigue. Blue Borage Honey has an
unmistakable light, clean herbal flavor with a
floral bouquet. Its delicate taste and color
draws from the spirit of the Borage flower. "It

Bees generally forage for
plant nectar, but they also can take the sweet
secretions of aphids known as Honeydew. Honeydew
nectar is produced from a small insect (Ultracoelostoma
assimile) living in the bark of two of New
Zealand's beech forests, mainly the black beech
(black from the sooty mould growing on the
surplus nectar covering the trunks and branches)
and to a lesser extent, the red beech. In the
early morning sunlight, the droplets of nectar
glisten like the morning dew, giving it the
name, Honeydew. The aphids dine on the nectar
and the honeybees collect the excretions,
turning it into a rich, flavorful honey that
remains naturally liquid. Honeydew is a
remarkable "functional food" that is rich in
minerals, antioxidants, antibacterial
properties, and oligosaccharides which are known
to maintain and enhance the body's digestive
system. This honey is rich in minerals and
antioxidants. Honeydew has been used in
folk medicine as a treatment for heartburn, acid
reflux, sour stomach, and other intestinal
distress. Perhaps the reason it is so effective
is that some honeys (especially Honeydew)
contain significant levels of oligosaccharides.
Oligosaccharides are complex sugars found in
some foods that encourage the growth of
beneficial bacteria (specifically,
Bifidobacterium bifidum and lactobacilli) in the
digestive tract. Oligosaccharides are known as "prebiotics"
because they help promote the growth of "probiotics,¨
the "friendly" bacteria that help balance
microflora in the human gastrointestinal tract.
Honeydew honey contains larger amounts of
oligosaccharides (about 5%) than nectar honey.
Oligosaccharides present include erlose,
theanderose, ketose, raffinose, melezitose,
maltotriose and panose.
Honeydew honey is a must in the kitchen as it
retains its rich flavor during cooking. As an
added bonus, Honeydew honey can be used as a
cancer-preventing marinade. The National Honey
Board has documented that marinating meat for
four hours in marinades containing 30% honey
significantly reduces the formation of
heterocyclic aromatic amines (potential
cancer-causing compounds) in meat that begins to
char or blacken when cooked at high
temperatures. Honeydew has long been the choice
of chefs in New Zealand for glazes and in
baking.
